If you ask a New Englander to select the quintessential summer meal many would say "a steamed Maine lobster with sides of cole slaw, baked potato and a fresh ear of steamed corn". Throw in a picnic table with an ocean view and you have the perfect evening. Even if you don't live near the coast you can create this fantastic meal at home. Thanks to air delivery fresh lobster is available just about any where. So, tie on the bibs, bring out the mallets and lobster crackers and have a great evening with friends. Perfect Steamed Lobster
- 1 quart water
- 1 lemon, sliced
- 1/2 bunch fresh parsley
- 5 black peppercorns
- 2 (1 1/2-pound) whole lobsters
Fit a very large stockpot or soup pot with a rack or an upside-down heat-proof plate on the bottom. This will keep the lobsters out of the water so they will steam cook instead of boil. Then combine all the ingredients except for the lobsters and bring to a boil. Place the lobsters on the rack, cover tightly with the lid and turn the heat to low. The lobsters will steam in approximately 7 minutes.
