5 Egg Recipes for Easter Brunch

Can you believe Easter is just a few days away? Somehow it seems this year is just flying by. Personally I am thrilled that the warmer weather is upon us, even if it's still intermittent nice days mixed in with the cold (and surprise snow this morning!).

With Easter in mind, I thought I'd share a few fun egg-centric recipes as inspiration for your Easter table. Easter brunch is one of my favorite family celebrations of the year, and eggs often are the star of the show, so why not dress it up a bit this year?

Deviled Eggs from 101 Cookbooks. A sophisticated twist on this American classic, these are the perfect finger food to serve as a light appetizer before the big meal.

Spinach and Red Pepper Bacon Wrapped Eggs from How Sweet It Is. Basic egg cups, upgraded! These are another easy treat that elevates a simple baked egg to a self-contained meal (though you don't have to stop at just one). Plus, they present beautifully.

Scrambled Egg and Roasted Asparagus Toasts from Foodie Crush. A fun and inventive way to make basic scrambled eggs into something new and different. Might be even better if you added some cheese and tossed these under the broiler...

Triple Berry Dutch Baby from Joy The Baker. This egg-y breakfast dish is a delightful mix between a crepe and a giant pancake. Topped with fresh berries, and perhaps a splash of syrup or a sprinkle of confectioners sugar, it's a delicious and elegant treat.

Easter Egg Cake from Hummingbird High. Okay - you got me. This isn't an egg-centric recipe per se, but it is an Egg Cake! Plus it's a beautiful little treat, and would look lovely atop any Easter table.
