This one doesn't have a strict ingredients list because it's a salad that Laura made up. The picture pretty much tells you what's in the salad. Like Laura, what you see is what you get.
And what you get is amazingly fresh, summery, and delicious.
Laura's Spinach, Orange, Goat Cheese, & Bacon Salad Serves 6
- Baby spinach
- crumbled goat cheese
- orange slices, halved
- bacon, in strips
- red onions, sliced
- yellow corn kernels
- sesame seeds, untoasted
- balsamic vinaigrette
- salt and pepper
So here's what I remember from watching Laura put together the salad. She lay down a bed of baby spinach on a large round serving platter like Heath Ceramics. Then she crumbled the goat cheese over the greens, corn, onion, and the orange slices halves arranged in the circle, and I suggested she keep the bacon in strip and arrange that between the orange slices in a circle. Then she drizzled it with her own balsamic vinaigrette.
How did it taste? Well let's just say that it reminded Fatima why she now loves salads: "We [Laura and I] were in college and she made this really simple salad of just greens and her dressing. Oh my God. I couldn't believe how amazing her dressing made the salad taste. I never ate salad until Laura made me that salad. I used to be a strictly meat, meat, meat girl." ((Tee hee!))
