The wonderful striations and patterns are due to the wood being partially decayed before it is cut and dried. Each board is unique.
The organic, natural quality of the wood pairs beautifully with the rustic, handmade aesthetic of Simon Pearce's pottery. The speckled glaze on the Woodbury collection is particularly fitting here.
This handsome black handled cheese knife from David Mellor is one of my favorites (you can see it in person at our kitchen store Local Root).
